The simplest 4 ingredient roasted strawberry sauce to whip up in 5 minutes and enjoy all week. I originally created this recipe when making vegan cheesecake. I am a “fruity” dessert girl through and through, so I needed some sort of topping and this sauce came into being. Upon having leftovers in the fridge, I tried it on my waffles on a Sunday morning. AMAZING. Then I proceeded to top oatmeal, banana bread, even using it as a strawberry jam. Every context it was delicious. So I knew I had to share it with you.
Here’s how you do it, place 2 cups of strawberries (I use frozen but fresh work as well!) in a large sauce pan. Add 1 Tbsp cornstarch, 1 Tbsp maple syrup/honey/sugar (more if you want it sweeter), and 2-3 Tbsp water. Let it meld about 3 minutes, then get out a potato masher (or whatever mashing utensil you have) and mash the berries, allowing everything to mix. Let it cook about 2 minutes more and remove. Bam roasted strawberry sauce.
You can use it right away for a warm sauce, or store it in the fridge for a type of strawberry jam. I’ve also tried and and loved it with raspberries. Blueberries would work too. Add in chia seeds for something thicker (and some fiber!) The possibilities are endless 🙂 I hope you enjoy!
- 2 cups strawberries (fresh or frozen)
- 1 Tbsp cornstarch
- 1 Tbsp maple syrup
- 2 Tbsp water
- Put all ingredients in a sauce pan over medium heat for 3-4 minutes.
- Mash the strawberries and mix everything together. Let cook about 2 more minutes.
- Remove from heat and serve.
