Dark chocolate coconut butter cups! Also known as, cups of joy. The most delightful dark chocolate treats filled with creamy coconut butter and sprinkled with hemp seeds. A simple, decadent recipe that will brighten your week, from the inside out.
Life is so sweet right now. I don’t mean to be cheesy, I really don’t. And maybe it’s the post-yoga bliss I’m feeling, or the vibes from spending a Saturday morning sipping coffee with friends, but I can’t help but smile. I’m so lucky to have so many people in my life who I get to love. To be able to travel to beautiful places (hello Costa Rica) and learn a little more about the world. To flex my brain everyday and push myself further outside my area of comfort. Being able to wake up in the morning and sip on freshly brewed coffee while writing or creating. Feeling creativity flow through me and dancing along. It can at times feel overwhelming to acknowledge what an incredible life I’ve been gifted. And that’s not to say things are perfect, far from it. But the scars and the tears and the gut wrenching mistakes bring so much meaning to the beauty. So many opportunities to turn another corner, pick myself back up, and start fresh.
One of my favorite little joys is seeing Jake after our respective days and sitting down to enjoy a meal. Then spending the next hour or two talking and laughing, or sometimes venting and discussing. Regardless, it’s always a high point of my day. We brew a pot of tea, grab a sweet, and snuggle up to enjoy a show or read our books together. It’s exactly how I’d choose to spend everyday, and I’m so grateful that I’m able to share it with him.
Since this time is so sacred to me, I take cooking and dessert creating very seriously. First and foremost, I love it. But secondarily, I love when Jake loves it. We recently tried the coconut butter cups from Eating Evolved, and we were smitten. While we’re normally Justin’s fanatics, it was was fun to switch up. They are a bit like an Almond Joy – but with darker chocolate and no almonds. So the inspiration for these cups came straight from the source, and they are every bit as delicious. Especially since I used Eating Evolved coconut butter for the centers.
Jake and I have devoured the cups, having one or two with our nightly tea and savoring their slight sweetness. We’ve even taken to affectionally calling them “Cups of Joy” after (my) beloved Almond Joys. If you’re not convinced, they take 15 minutes to make and only 4 ingredients, plus a hemp seed topping if you choose. - Prepare 12 muffin tins with silicone or parchment liners.
- Melt chocolate and coconut oil over low heat until smooth.
- Drop a small amount of chocolate into the bottom of each cup and move tin so it covers bottom.
- Place in freezer at least 5 minutes.
- Melt coconut butter in microwave 30 s, stir in maple syrup.
- Remove chocolate from freezer and drop some coconut butter in the center of each chocolate.
- Re-heat the remaining chocolate if necessary, and pour chocolate to cover the coconut butter.
- Move the tins around once more to ensure chocolate is covering all of the coconut butter.
- Sprinkle with hemp seeds.
- Place in freezer at least 10 more minutes.
