I’ve got a weekend brunch recipe for you! The easiest and most filling gluten-free and vegan french toast, made with chickpea flour! This chickpea flour french toast is packed with protein and makes a satisfying breakfast or brunch perfect for dining with any crowd.

If you don’t know what chickpea flour is, it’s a popular Indian flour made entirely of ground chickpeas (also called Besan). Cool right? And it doesn’t taste weird, but rather, savory and almost egg-like. Perfect for french toast! When used in baking it makes for a protein-packed, nutrient dense replacement for regular flour.
This chickpea flour french toast came about when wanting to make Jake french toast on his birthday last month. We didn’t have any eggs, but it’s my tradition (complete with whipped cream smile) and I wasn’t about to miss out.
I looked through the pantry, and wondered if trying chickpea flour would work? And yes, this was obviously a risky move based on the above statement lol, but it worked wonderfully! Honestly you would have no idea they weren’t made with eggs.
I was over the moon. And more importantly, he LOVED them! Since then, I’ve tested them a few other weekend mornings and gotten the flavor and texture just right.
To make the chickpea flour french toast, I began with chickpea flour and gluten-free bread. I then mixed the flour with cornstarch because I found this helps give them the crispy quality I love in crusty french toast. Milk, and finally, cinnamon and vanilla make for a classically simple flavor. No sugar, no dairy, no eggs. And it tastes amazing.
I recommend making my strawberry compote for topping, although if that’s not in the cards fresh or frozen fruit would work beautifully. Followed by pure maple syrup and powdered sugar. Maybe even coconut cream. Or slice them into sticks for an on the go option! However you enjoy them, I know you will fall in love.
- 4 slices bread of choice (even better if day old)
- ½ cup chickpea flour
- 2 Tbsp cornstarch
- ¼ tsp cinnamon
- ¼ tsp vanilla extract
- ½ cup unsweetened nut milk
- 1 Tbsp coconut oil, for cooking
- Combine chickpea flour, cornstarch, cinnamon, vanilla, and almond bowl in a shallow bowl and whisk to combine. Set aside.
- Heat coconut oil in a large pan over medium heat. Drop slices of bread one by one into batter and into pan.
- Cook for 4-5 minutes per side, until golden brown and crisp.
