I just returned home from an incredible week-long yoga retreat to Costa Rica with my Ann Arbor yoga fam. It was everything I needed – sunshine, movement, sleep, incredible new friends. Meditations on the beach, fresh coconut water, hikes, ocean, connection. I could go on and on. It was amazing. And if you’re ever in Costa Rica, check out Santa Theresa. And definitely go surfing.
After getting home late Friday night, I spent Saturday and Sunday battling the stomach flu. In bed. So lunches (and meals in general) this week were kept simple. Which is perfect because that’s exactly what this blog is about. Simple, real, everyday meals. When I threw together this sandwich for lunch I knew I wanted to share it. So much flavor, so little thyme 😏
I used my homemade fluffy gluten-free bread and topped it with tomato + butter lettuce + cucumber + avocado
Plus all the condiments, or in this case, my favorite mustard and a delicious herby white bean tahini spread.
If you make anything this week- make the spread! Mashed white beans, creamy tahini, and flavorful herbs combine to create a perfect combination between hummus and “chicken salad”- tons of texture, flavor, and satisfaction. It’d be just as good on toast, or a bagel, any carb of choice really. Probably even a lettuce wrap if you included enough toppings to make it a meal. It’s simple to throw together and incredibly versatile.
And you can switch it up! Try chickpeas, or black beans. Change the spices. The recipe is very forgiving. Use it as a blank canvas to get creative in the kitchen. - Mash the white beans, tahini, and herbs in a small bowl.
- Spread the mash on one slice of bread, toasted if desired.
